Jacob graduated from Tonganoxie High School in 2021. At the time of his death, he was attending the TBLSEC Pathways 18–21-year-old transition program in Tonganoxie, KS.
Jacob lived an active life. He was always on the go from car rides to swimming, to nature walks, he loved being busy. At home, he enjoyed playing his keyboard, hanging out with his family and baking brownies which he would gobble up while they were still warm. His favorite place in the world, however, was grandma’s house.
Although Jacob had limited vocabulary, he persuaded many people to give him Skittles. Everyone knew him as the boy who loved Skittles and he would often receive the rainbow colored candy for Christmas, Easter, or his birthday.
He is survived by his parents Dean and Julie (Schreiber) Coffey, his sister Naomi Coffey, and his brother Seth Coffey of Linwood, KS. He also leaves behind his paternal grandmother Lackhna Coffey of Gladstone, MO. Jacob is mourned by many who loved him including aunts, uncles, cousins, friends, teachers, and classmates throughout Kansas and Missouri.
Jacob is preceded in death by his paternal grandfather Russell Coffey, his maternal grandfather Charles Schreiber, his maternal grandmother Judy (Herbert) Schreiber, and his uncle Michael Schreiber.
